CHOP'S POWER INJECTOR SYSTEM The Chop's Power Injector System is a manual four-needle meat injection system with a bottle capacity of up to one-half gallon. The system is designed for preparing briskets, pork shoulders, poultry, whole hogs, and other cuts of meat. It may be used for backyard cooking, barbecue competitions, catering, restaurants, and other food preparation applications. FOUR-NEEDLE CONFIGURATION The injector includes four 14-gauge stainless steel needles. The needles are positioned across the injection head to deliver injection mixture into multiple locations. The system may be used with one, two, three, or four needles. Three plug screws are included for closing unused needle positions when fewer than four needles are installed. ONE-HALF-GALLON BOTTLE The bottle holds up to one-half gallon of prepared injection mixture. For operation, fill the bottle at least one-quarter full, secure the bottle, and use the hand pump to pressurize the system. Larger-bore 12-gauge needles are available separately for thicker, properly strained mixtures. Closed-tip needles are available separately for users who prefer injection mixture to discharge through openings along the sides of the needle. Metal needle adapters are also available separately and may be installed as an optional durability upgrade. The injector comes standard with plastic needle adapters. Metal adapters are not included. PREPARING THE INJECTION MIXTURE Prepare and strain the injection mixture before placing it in the bottle. Herbs, spices, seasoning particles, and other solid ingredients may clog the needles, adapters, tubing, or fittings. HOW TO USE Clean and sanitize all food-contact components before the first use. Prepare and strain the injection mixture. Fill the bottle at least one-quarter full. Confirm that the needles, adapters, plug screws, tubing, and fittings are securely installed. Secure the bottle and use the hand pump to pressurize the system. Insert the needles into the meat. Pull the trigger to dispense the injection mixture. Needle placement, bottle pressure, and the number of installed needles may be adjusted for different cuts of meat and injection mixtures. CLEANING AND SANITIZING The injector must be cleaned and sanitized before its first use and immediately after every use. Release all pressure from the bottle before opening, adjusting, disassembling, or cleaning the system. Wash the bottle, tubing, fittings, adapters, plug screws, trigger assembly, and needles with hot soapy water. Sanitize all food-contact components using a properly diluted food-safe sanitizing solution according to the sanitizer manufacturer's directions. Flush the complete system thoroughly with clean hot water until all injection mixture, soap, sanitizer, and food residue have been removed. Do not allow injection mixture to dry inside the needles, adapters, tubing, fittings, or trigger assembly. Allow cleaned components to drain and dry before storage. SAFETY INFORMATION The injection needles are sharp. Use care when installing, removing, handling, and cleaning them. Never point the injector toward yourself or another person. Make sure the needles, adapters, fittings, tubing, and plug screws are properly installed before pressurizing the bottle. Never open the bottle or remove components while the system is pressurized. Always release the bottle pressure before cleaning, adjusting, servicing, or storing the injector. This product is intended for food preparation only.
