Global Sugar Art Premium Royal Icing Mix, 15 Ounces by Chef Alan Tetreault. Chef Alan Tetreault has formulated this icing to have a stronger hold for gingerbread houses and a firmer consistency which is ideal for piping flowers. On medium speed, 15 ounces of mix and 4-1/2 Tablespoons water, beat 6-8 minutes until icing stands in peaks. Flavor and color as desired. To use as Cookie Icing: Thin icing with drops of water until a spoonful of icing dropped in the bowl levels out in the icing at the count of 10. To create Royal Icing Flowers: For a stiffer icing, simply beat the icing longer-up to 8-10 minutes for a very stiff icing. To create Gingerbread Houses: Beat icing 8-10 minutes until very stiff. Build walls of gingerbread house first then allow to dry before adding roof. Allow entire house to dry overnight before decorating. Net Weight: 15 oz. (425.2g).
