4 cups (about 1 lb) of Donut Mix
1 cup of water
2 1/2 teaspoons of yeast

  1. Dissolve the yeast in the water in a mixing bowl, then add Unpretentious Baker Donut Mix.
  2. Mix for 1 minute on low, then 10 to 12 minutes on medium speed until the dough is smooth and pliable. Scrape the dough down into the bowl.
  3. The dough should be at 80°. Let it rise in covered bowl it for 45 minutes. This step is important as it allows the dough to ferment. Dough should have a slightly sour smell to it.
  4. Punch down the dough and roll it out. Cut into rings using a donut cutter, or a cookie cutter. You can use a smaller cookie cutter to cut out the centers of the rings.
  5. Put a rack on a cookie sheet and place the rings on the rack. Proof rings for 15 to 30 minutes. Until light and doubled in size. To make a proofer, preheat your oven to warm and place a cake pan of boiling water on the bottom rack of the oven. This will create a warm moist heat for the donut rings to raise in.
  6. Bake at 350F° at for 25 to 30 minutes, or until light golden brown, then allow to cool. Frost with icing of choice. Alternatively, fry at 375F° until light golden brown, then glaze while hot. Serve and enjoy! Yields about 2 to 3 dozen donuts depending on size.
